My favorite of Lesley's key ingredient is the coconut. It shows up in so many of my favorite dishes. For example, I often use coconut milk to cook porridge or add grated coconut to the porridge itself. Everyone loves coconut-based baked goods including coconut rock cake, coconut pies, coconut ice cream, and coconut rolls. It's not rice and beans unless it's cooked in coconut milk. You can't have ducana without the coconut. Then, we have our refreshing beverages including pure coconut water pina coladas, and coconut crushes. Then we have our oil down - I have a delicious vegetarian version which is easy to prepare. Coconut oil is great for frying or for drizzling on toast or hot bread with honey. Yummm!!! My favorite ingredient from the list is cornmeal! I have developed a newfound appreciation for it after adding it to my peach cobbler topping and having cornbread stuffing for the first time last year!
Beans! They're so versatile, budget friendly, filling, comforting, life saving. I'm Dominican American (and a native new yorker) so I'm familiar with these ingredients however I'd love to learn more about how these ingredients get used differently depending on the country. I read the intro sample of her cookbook and learned a few things that felt like aha moments. I'm appreciative of her taking the time and making a giant effort to put us Carribean folks in the cookbook realm but in a way deepens our understanding of where these dishes come from❤.
