Picking up from the delicious ginger-miso tempeh meatballs I just shared, this is my current favorite way to serve them, and a little bonus for paid subscribers.
The meatballs themselves are surprisingly meaty, with a tender, dense texture that begs for some fresh cooked rice to serve alongside. Crunchy, cooling, salted cucumbers are always a great textural contrast, but the sauce — which is sweet, savory, and has a little bit of wasabi-like burn from the mustard — makes this a bowl you’ll lick clean.
