A riff on a recipe from Hetty Lui McKinnon's new cookbook Tenderheart

The “ish” here comes from the fact of there being no guanciale, pancetta, or bacon in the dish — the smoky, fatty, meaty element that’s traditional. Hetty reinvents it as a vegetarian main by incorporating sweet caramelized cabbage.
